• Zucchini And Bacon Fritters With Onion Relish

    Ingredients for onion relish

    • 3 tablespoons olive oil
    • 2 medium brown onions, sliced
    • 1 teaspoon chilli flakes
    • 2/3 teaspoon sea salt
    • 1 clove garlic, finely diced
    • 2 tablespoons balsamic vinegar
    • 1 tablespoon tomato paste
    • 1/2 teaspoon coriander powder
    • 1/2 cup water

    Ingredients for the fritters

    • 2 rashers of bacon, diced and trimmed of excess fat
    • coconut butter for cooking
    • 2 medium zucchini’s, grated
    • 1 medium carrot, peeled and grated
    • 1/2 green onion, chopped
    • 2 eggs
    • 2 tablespoons tapioca flour
    • 2/3 teaspoon sea salt
    • 1/2 teaspoon pepper
    • 1/4 teaspoon baking powder
    • 3 tablespoons coconut butter
    • 1 spring onion, diced (optional)

    Method

    1. For the relish, heat olive oil in a medium frypan or saucepan over a hot but not sizzling heat. Add onion, chilli and salt and turn the heat down to low-medium. Sauté onion for 4-5 minutes, then add the rest of the ingredients. Mix and cook for 15 minutes until softened and caramelized
    2. Pan fry bacon pieces in a small amount of coconut butter until crispy. Remove to a plate with paper towel to drain excess fat
    3. In a large bowl, mix the rest of the fritters ingredients with crispy bacon into a thick, moist batter. Heat coconut butter in a large frypan. Using a spoon or ladle, scoop the mixture as individual patties and gently place in the hot pan. Fry for 3 minutes on each side or until a golden brown crust forms. Add more coconut butter if needed
    4. Serve with the onion relish and garnish with diced spring onion (optional)
