    A healthy gluten free version of a Chinese favourite


    • 750 grams diced pork
    • 1 cup freshly squeezed orange juice
    • 1/2 cup tomato paste
    • 3 tablespoons honey
    • 1/4 cup apple cider vinegar
    • 2 teaspoons fresh grated ginger
    • 1/4 teaspoon salt
    • 1/2 red capsicum, diced
    • 1/2 green capsicum, diced
    • 400 grams pineapple, fresh or tinned
    • Small amount of olive oil


    1. In a medium bowl prepare sauce by combining orange juice, tomato paste, honey, vinegar, ginger and salt. Mix well
    2. Heat a wok or large fry pan over a high heat. When hot, add 1 tablespoon of olive oil and add the pork. Cook until about 75% done stirring regularly. Remove from heat and set aside
    3. Reduce the heat slightly and add an additional 1/2 a tablespoon of olive oil. Add red and green capsicum plus pineapple. Stir fry for 3 minutes
    4. Pour in the sauce and bring to a simmer. Reduce the heat further and add the pork and cook until the pork is cooked all the way through
    5. Serve as is or on a bed of brown rice
