    Ingredients for chicken

    • 1 kg boneless, skinless chicken thighs cut into chunks
    • 2 eggs
    • 1 tablespoon water
    • 3 tablespoons soy sauce
    • 1 and 1/2 cups tapioca flour
    • 1 tablespoon garlic powder
    • 2 tablespoons coconut butter

    Ingredients for sauce

    • Large can (approx. 400 grams) of pineapple pieces with juice
    • Juice from one orange
    • Juice from one lemon
    • 1/4 cup apple cider vinegar
    • 3 tablespoons honey
    • 1 tablespoon tapioca flour
    • Salt and pepper to taste
    • 1 spring onion, finely sliced for garnish


    1. In a small bowl, combine eggs, water and soy sauce. Whisk until well mixed
    2. In another small bowl, combine tapioca flour and garlic powder
    3. Melt coconut butter in a large frypan over a medium heat. Dip chicken in the egg mixture allowing excess to drip off before coating in flour and garlic mixture. Add to frypan and cook until no longer pink in the middle. Keep turning to a minimum or the coating will fall off
    4. While chicken is cooking, combine sauce ingredients in a pot and simmer until thick. Season with salt and pepper if desired
    5. Pour sauce over cooked chicken and combine well before serving.
    6. Garnish with spring onion
