• Sweet Potato Bacon Fritters

    Sweet Potato Bacon Fritters

    Makes 4-6 fritters depending on size. Simply double or triple the recipe for more.


    • 500 grams sweet potato, peeled and quartered
    • 4 slices bacon, fat and rind removed, chopped
    • 3 spring onions, thinly sliced
    • 1 egg
    • Salt and pepper
    • Coconut oil for cooking


    1. Boil sweet potatoes until soft and tender. They should be easily poked with a fork
    2. While waiting, heat a fry pan over a medium – high heat with a small amount of coconut butter and cook the bacon pieces until crispy. Remove and set aside
    3. Drain the sweet potato and mash it until all lumps are removed. (Allow to cool for a few minutes before the next step or the egg will start to cook)
    4. Add the cooked bacon pieces, egg, spring onion and salt and pepper to your liking. Combine well
    5. Form 4-6 patties from the mixture
    6. Using the same fry pan as the bacon, add a small amount of coconut oil and bring to a medium – high heat. Cook each side until golden brown and heated through, about 4 minutes per side
