    Ingredients

    • 4 sirloin steaks, 200 grams each, 3cm thick
    • 2 tablespoons olive oil
    • 1 tablespoon coconut butter
    • 1 brown onion, finely chopped
    • 1 clove garlic, crushed
    • 12 prawns, peeled
    • 1 cup sweet white wine
    • 300 ml coconut cream
    • 12 scallops
    • sea salt and black pepper
    • 1 teaspoon dill, chopped

    Method

    1. Pre heat barbecue or grill to high, Season steaks with salt and pepper, then drizzle lightly with oil
    2. Add steaks to heat and cook for 3-4 minutes either side (for medium rare) turning only once. Remove steaks and cover with foil to keep warm
    3. For the sauce, heat a fry pan over a medium – high heat. Add coconut butter, onion and garlic. Cook for 3 minutes or until onion is soft and garlic is aromatic
    4. Add prawns and cook for a further 5 minutes. Pour in wine. Bring to a simmer for 5 minutes
    5. Add coconut cream and stir to combine. Reduce heat slightly and add scallops and dill. Allow to simmer for 4-5 minutes
    6. Add steaks to fry pan and baste with the sauce
    7. Serve steaks topped with seafood sauce as is or with your favourite side dish
