• Sun Dried Tomato Chicken Bake

    Only a few simple ingredients but very tasty


    • 1 kg chicken breast cut in half lengthways or boneless chicken thighs
    • 250 grams sun dried tomatoes in oil
    • 8 cloves garlic, sliced thinly or grated
    • 2 tablespoons dried basil
    • Salt and pepper to taste


    1. Preheat oven to 190 degrees Celsius
    2. Place chicken in a glass baking dish. sprinkle with the basil, salt and pepper and mix well
    3. Sprinkle the garlic and sun dried tomatoes over the top. Drizzle entire contents of oil from tomatoes over the chicken
    4. Cover with foil and bake for 20 minutes
    5. Remove foil and bake for a further 15 minutes or until chicken is no longer pink in the middle
    6. Serve on a bed of mashed sweet potato
