    Sticky Chili Chicken


    • 4 boneless, skinless chicken breasts
    • 3 tablespoons chili paste (hot or mild according to taste)
    • 2 tablespoons honey
    • 3 tablespoons olive oil
    • zest and juice of 1 lemon
    • 1/2 teaspoon paprika
    • 1 teaspoon fine sea salt
    • pinch of black pepper
    • fresh chopped mint for garnish


    1. Pre heat oven to 200 degrees Celsius
    2. In a bowl combine chili paste, honey, olive oil, paprika, lemon juice, lemon zest, salt and pepper. Stir until well mixed
    3. Place chicken breasts into a shallow dish and pour marinade over the top. Leave to marinate for 15 minutes turning a couple of times
    4. Heat a fry pan over a medium – high heat and cook chicken for 3 minutes each side turning only once
    5. Transfer chicken to a baking tray and place in oven for 8-10 minutes until chicken is cooked and sticky
    6. Slice the chicken, sprinkle with mint and serve along with any pan juices remaining
