• Spinach and Ham Omelet Roll


    A supercharged breakfast or simple snack option


    • 2 slices thick shaved deli ham (not processed)
    • 2 eggs
    • handful of baby spinach, chopped
    • salt and pepper
    • non stick cooking spray
    • any additional toppings you desire (optional) – cheese, tomato, mushroom etc


    1. Heat a non stick fry pan over a medium heat. Grill the ham both sides, flipping only once. Remove from pan and set aside
    2. Lower the heat to a medium low and spray lightly with cooking spray
    3. Crack and whisk both eggs together and pour into the fry pan. Swirl the pan around so the egg makes a thin layer covering the entire pan. Sprinkle lightly with salt and pepper
    4. Top the egg with spinach and cover. Cook for 2-3 minutes until the egg is no longer runny on top. Remove cover and lay ham over the top
    5. Use a spatula to lift the egg and begin to roll it up. When finished rolling, cook for an additional 30 seconds to help it seal then serve
