• Spinach And Bacon Stuffed Chicken

    • 10 slices of bacon, fat and rind removed
    • 2 tablespoons coconut oil or olive oil
    • 1/2 cup red onion, chopped
    • 4 cloves garlic, chopped
    • 350 grams spinach, chopped
    • 4-5 boneless, skinless chicken breasts
    • Dried thyme
    • Salt and pepper (if desired)


    1. Preheat oven to 190 degrees Celsius
    2. Melt oil in a frypan over a medium heat
    3. Chop 6 of the bacon slices into small pieces and cook until brown and slightly crispy. Remove from pan and set aside
    4. In the same pan, add the onion and garlic and sauté until translucent and then add the spinach and sprinkle with salt and pepper if desired
    5. Continue to cook over a medium heat until the spinach starts to wilt. Remove pan from heat and stir in the cooked bacon pieces
    6. Butterfly each chicken breast and divide the filling evenly into each one
    7. Wrap each chicken breast with a slice of bacon. Place them in a glass baking dish and sprinkle with dried thyme
    8. Bake uncovered for 35 minutes before increasing the heat to 230 degrees Celsius and cooking for an additional 10 minutes or until bacon is brown and chicken is cooked
