• Smoked Salmon Casserole

    Quick, simple and healthy


    • 1 cauliflower, cut into small florets
    • 1 cup asparagus, finely diced
    •  250 grams smoked salmon, finely diced
    • 10 eggs
    • 1/4 cup coconut milk
    • 1/3 cup chives, finely diced
    • 1 tablespoon fresh dill, finely diced
    • black pepper to taste
    • 150 grams mushrooms (optional), sliced


    1. Preheat oven to 180 degrees Celsius
    2. Steam or microwave cauliflower for 4-6 minutes or until it becomes tender but not mushy
    3. Layer the cauliflower into a glass baking tray followed by the diced asparagus and then the smoked salmon
    4. In a mixing bowl, whisk together the eggs, coconut milk, chives, pepper and mushrooms. Pour the mixture evenly over the top
    5. Place the tray in the oven and bake for 35-40 minutes or until cooked all the way through
    6. Cut into pieces and serve with a side salad or simply enjoy on it’s own
