• Slow Cooker Chicken Cacciatore

    Ingredients

    • 1.5 kg boneless, skinless chicken thighs
    • 750 grams button mushrooms, halved
    • 1/4 cup tomato paste
    • 1 large onion, diced
    • 2 tablespoons coconut butter or olive oil
    • 1/2 teaspoon mild chili flakes
    • 1 and 1/2 teaspoon dried oregano
    • 3 cloves garlic, minced
    • 1 large can of diced tomatoes, juice drained
    • 1/2 cup red wine
    • 1/2 cup chicken stock
    • salt and pepper

    Method

    1. Heat a fry pan over a medium heat. Add coconut butter or olive oil, onion, garlic, tomato paste, oregano and chili flakes. Cook until onion is softened
    2. Transfer the mixture into a slow cooker
    3. Stir in tomatoes, chicken stock, red wine and mushrooms
    4. Season chicken with salt and pepper. Add to the slow cooker
    5. Mix everything together well
    6. Cook on low for 5-6 hours
