• Slow Cooked Coconut Lime Roast Chicken

    Add your favourite roast veggies like sweet potato, potato, pumpkin, carrot etc to the slow cooker with the chicken for a complete roast meal


    • 1 whole chicken
    • 3 cups coconut milk
    • 6 cloves garlic
    • zest of 2 limes
    • 1/4 teaspoon coriander
    • 1 teaspoon ginger
    • 2 teaspoons basil
    • salt and pepper
    • vegetables of choice


    1. Place the whole chicken into the slow cooker and turn onto low
    2. Combine coconut milk, lime zest and all spices together in a bowl and mix well. Set aside
    3. Add vegetables of choice and spread around the chicken
    4. Pour the coconut milk mixture over the top, season with salt and pepper and cover
    5. After a few hours (when chicken is about half cooked) remove the lid and lightly squash vegetables down or slice open and spoon liquid over them to fuse the flavours
    6. When cooked, serve everything and drizzle sauce over the top
