    A healthy and refined carbohydrate free alternative to the traditional high fat and high sodium taco – (makes 8)

    Ingredients

    • 650 grams lean mince of your choice – beef, pork, chicken, turkey, lamb, wallaby
    • 1 teaspoon garlic powder
    • 1 teaspoon cumin
    • 1 teaspoon salt
    • 1 teaspoon mild chili powder
    • 1 teaspoon paprika
    • 1/2 teaspoon oregano
    • 1/2 onion, finely diced or minced
    • 3/4 cup water
    • 120 grams tomato paste
    • 8 large lettuce leaves (iceberg lettuce)
    • 1/2 cup shredded low fat cheese (optional)
    • Sour cream (optional)
    • olive oil or coconut butter for frying

    Method

    1. Heat a small amount of oil in a large fry pan over a medium heat. Brown mince while ensuring large lumps are broken down to smaller pieces
    2. When no longer pink, add garlic powder, cumin, salt, chili powder, paprika and oregano. Combine well
    3. Add onion, water and tomato paste. Simmer on a low heat for about 20 minutes
    4. Wash and dry lettuce leaves. Divide the meat equally between each leaf.
    5. Top with cheese and sour cream if desired
