• Simple Blueberry Muffins


    This recipe makes 8-10 muffins. Simply adjust the recipe to make more or less.


    • 1 cup almond butter
    • 1 cup almond meal
    • 3 eggs, whisked
    • 1/2 cup honey
    • 1/3 cup unsweetened shredded coconut
    • 1/3 cup extra virgin olive oil
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon sea slat
    • Pinch of cinnamon
    • 1/2 cup blueberries (fresh work best)


    1. Pre heat over to 180 degrees Celsius
    2. In a bowl, combine all of the dry ingredients and mix well
    3. Once the dry ingredients are combined you can the add all of the wet ingredients one at a time ensuring each is well mixed before adding the next. Add the blueberries last
    4. Evenly distribute the batter into silicone muffin cups or a greased muffin tin
    5. Bake for 15 to 20 minutes or until they rise and are not wet in the middle
    6. Allow to cool before serving
