    Ingredients

    • 3 tablespoons olive oil
    • 1 large onion, diced
    • 3 cloves garlic, minced
    • 3 large carrots, diced
    • 1 slice bacon, diced
    • 4 cups chicken stock
    • 1 can coconut milk
    • 1 tablespoon fresh parsley, chopped
    • 250 grams salmon
    • 500 grams white fish
    • 1 – 2 dozen prawns, peeled
    • 2 – 3 tablespoons arrowroot powder
    • 1 cup frozen peas
    • salt and pepper to taste

    Method

    1. In a large pot, sauté onion in olive oil over a medium head until translucent. Add garlic and cook for another minute or so
    2. Add carrots and bacon and cook until the carrots soften
    3. Add chicken stock and coconut milk and stir well to combine. Season with salt and pepper. Bring to a simmer for about 5 minutes
    4. Remove about a cup of broth from the pot into a small bowl. Stir in 2 – 3 tablespoons of arrowroot powder until smooth. This will help thicken the broth and avoid lumps forming. Add back into the pot
    5. Add parsley, fish and peas. Simmer until fish is cooked to your liking
    6. Serve over a bed of cauliflower mash
