• Roasted Chicken With Sweet And Sour Onions

    Roast chicken with sweet sour onion


    • 500 grams boneless, skinless chicken thighs, cut into chunks
    • 2 cloves garlic, minced
    • 1 teaspoon coarse sea salt
    • 1/2 teaspoon black pepper
    • 1 onion, thinly sliced
    • 1 cup white wine
    • 1 teaspoon cinnamon
    • 2 tablespoons coconut butter
    • 1 tablespoon honey


    1. Pre heat oven to 210 degrees Celsius
    2. In a large bowl, toss chicken, garlic, salt and pepper together
    3. In a small saucepan over a medium heat, simmer together wine, onion, cinnamon and a pinch of salt until almost all of the liquid has evaporated
    4. Add honey and coconut butter and stir through for a couple of minutes
    5. Pour mixture over chicken pieces and combine well
    6. Spread chicken, onion and any juices onto a lined baking tray. Cook until chicken is no longer pink and onions are tender and caramelized, about 20-30 minutes
