    Roast pork with dijon glaze

    Ingredients – for roast

    • 1.5 – 2 kg boneless pork roast
    • 2 tablespoons paprika
    • 2 tablespoons cumin
    • 2 tablespoons garlic powder
    • 2 tablespoon fresh coriander, finely chopped
    • 1 tablespoon sea salt
    • 1/2 tablespoon black pepper

    Ingredients – for glaze

    • 1/4 cup coconut butter or olive oil, melted
    • 3 and 1/2 tablespoons water
    • 3 tablespoon Dijon mustard


    1. Pre heat oven to 200 degrees Celsius
    2. While oven heats up, place roast in a baking dish and use a sharp knife to score the surface
    3. In a bowl, combine paprika, cumin, garlic powder, salt and pepper. Mix well ensuring there are no lumps
    4. Rub the spice mixture thoroughly into the scored meat as well as around the sides. Sprinkle the top with fresh coriander
    5. Place roast in oven and cook for 15 minutes. After 15 minutes, reduce heat to 175 degrees Celsius and cook for an additional 15 minutes
    6. While the roast is cooking, whisk together all ingredients to make the glaze
    7. After cooking for 15 minutes at 175 degrees Celsius, remove the roast from the oven and brush it liberally with the glaze paying particular attention to the scored surface to allow the flavours to flow through the roast
    8. Leaving the temperature at 175 degrees Celsius, return the roast to the oven and cook for a further 40 – 45 minutes
    9. Allow to rest on a plate for a couple of minutes prior to carving and serving
