• No Refined Sugar Xmas Cake



    • 600 grams mixed dried fruit
    • 1 teaspoon ground cinnamon
    • 1 teaspoon vanilla essence
    • 1/4 teaspoon nutmeg
    • zest and juice from 1 medium orange
    • 3 tablespoons olive oil
    • 3 eggs
    • 200 grams almond meal
    • 50 grams crushed walnuts


    1. Pre heat oven to 180 degrees Celsius
    2. Prepare a 20 cm round cake tin by lining bottom and sides with grease proof paper
    3. In a bowl, combine dried fruit, cinnamon, nutmeg, vanilla essence, orange zest and juice, olive oil and eggs
    4. Add almond meal and walnuts. Combine well
    5. Spoon the batter into your prepared cake tin and cook for 1 and 1/2 hours or until a skewer comes out clean
    6. Cover the top while cooking if required to prevent over browning
    7. Can be stored in a refrigerated airtight container for up to 1 month
