    Prawn Scampi


    • 500 grams prawns, peeled
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 4 cloves garlic, minced
    • 1/2 cup chicken broth
    • 1/2 cup dry white wine
    • 1/4 cup lemon juice
    • 1/4 cup fresh parsley, finely chopped
    • 1/4 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • Parmesan cheese (optional)


    1. Heat olive oil in a fry pan over a medium heat and add prawns. Saute for 3 minutes or until cooked but not rubbery
    2. Add garlic and cook for an additional minute. Remove prawns, cover and set aside
    3. In the same fry pan increase the heat and add chicken stock, butter, white wine, lemon juice, parsley salt and pepper.
    4. Bring the liquid to a boil before reducing heat and allowing sauce to simmer until it is reduced by half
    5. Serve prawns over a bed of mashed sweet potato, green salad or cauliflower fried rice
    6. Spoon sauce over prawns and garnish with Parmesan cheese if desired
