- 3 tablespoons of lime juice
- 2 tablespoons of olive oil
- 2 large mangoes, peeled, pitted and diced
- 2 avocados, peeled, pitted and diced
- 2/3 cup red onion, finely chopped
- 2/3 cup cilantro, finely chopped
- 500 grams of peeled cooked prawns
- salt and pepper to taste
- In a small bowl prepare the vinaigrette by combining the lime juice and olive oil. Season with salt and pepper if desired.
- In a large bowl, combine the mangoes, avocado, red onion, cilantro and prawns. Pour in the vinaigrette and toss through.
- Serve cold.
