• Prawn, mango and avocado salad


    Serves 4


    • 3 tablespoons of lime juice
    • 2 tablespoons of olive oil
    • 2 large mangoes, peeled, pitted and diced
    • 2 avocados, peeled, pitted and diced
    • 2/3 cup red onion, finely chopped
    • 2/3 cup cilantro, finely chopped
    • 500 grams of peeled cooked prawns
    • salt and pepper to taste


    • In a small bowl prepare the vinaigrette by combining the lime juice and olive oil. Season with salt and pepper if desired.
    • In a large bowl, combine the mangoes, avocado, red onion, cilantro and prawns. Pour in the vinaigrette and toss through.
    • Serve cold.
