    Prawn curry

    Ingredients

    • 500 grams prawns, peeled
    • 1/4 teaspoon paprika
    • 1/4 teaspoon turmeric
    • 1/2 teaspoon salt
    • 1 tablespoon soy sauce
    • 2 tablespoons coconut butter or olive oil
    • 1 large onion, sliced thinly
    • 3 cloves garlic, minced
    • 1 and 1/2 teaspoons ginger, grated
    • 1/4 teaspoon cayenne pepper
    • 1 cup diced tomatoes
    • 1 small green capsicum, thinly sliced
    • 1 cup coconut milk, full fat
    • 2/3 cup water
    • 1 teaspoon chili pepper flakes
    • 1 tablespoon lemon juice
    • 3 tablespoon coriander, chopped

    Method

    1. In a medium bowl combine prawns, paprika, half of the turmeric, salt and soy sauce. Set aside
    2. Heat coconut butter or olive oil in a large fry pan over a high heat. Add onion and cook for about 5 minutes stirring continuously until softened
    3. Add garlic and ginger and cook for an additional 3-4 minutes. Add cayenne pepper and remaining turmeric. Stir through to mix
    4. Add tomatoes and cook for a further 5 minutes. Add capsicum and cook until it begins to soften
    5. Add prawns along with any juices, coconut milk, water and chili flakes. Bring to a boil before reducing to a simmer. Continue to simmer until sauce has thickened.
    6. Stir in lemon juice and serve
