- Liquid egg whites
- Chopped spinach
- Chopped onion
- Chopped capsicum
- Olive oil cooking spray
- Salt and pepper to taste
- Preheat oven to 190 degrees Celsius
- Spray a muffin tin with olive oil spray
- Fill each muffin cup halfway with egg whites
- Add chopped veggies to each cup until almost full
- Bake for 20 minutes
