• Pesto Vegetable Stack

    • 12 eggs
    • 1 large head broccoli
    • 200 grams pumpkin
    • 1 red capsicum
    • 2 medium carrots, grated
    • 1/4 cup pesto ( can use store bought or follow recipe below)

    Ingredients for pesto

    1. 40 grams fresh basil leaves
    2. 50 grams walnuts, chopped
    3. 1 clove garlic, peeled
    4. 5 grams parmesan cheese, grated
    5. 75 ml olive oil

    Combine all ingredients together in a food processor while slowly pouring in the olive oil.


    1. Preheat oven to 170 degrees Celsius
    2. Slice broccoli, pumpkin and capsicum into pieces about 1 cm thick
    3. Whisk the eggs, add pesto and grated carrot
    4. Grease a baking dish with olive oil spray and layer the pumpkin and broccoli on top of each other until it has all been used
    5. Pour egg mixture over the top and then top with capsicum
    6. Bake for 40-45 minutes or until cooked

    Freezes well and also makes a great high protein snack
