• Oven Fried Chicken

    • 1 and 1/2 kilos mixed chicken pieces
    • 2 cups almond flour (almond meal)
    • 1 egg
    • 1/2 cup almond milk
    • 4-5 tablespoons coconut butter or olive oil
    • 2 teaspoons garlic powder
    • 2 teaspoons onion powder
    • 1 teaspoon oregano
    • 4 teaspoons sea salt
    • 1 teaspoon pepper
    • 1 teaspoon Cajun spices
    • 1 teaspoon paprika


    1. Pre heat oven to 200 degrees Celsius
    2. Line a baking tray with grease proof paper or lightly grease with olive oil
    3. In a small bowl combine all seasoning ingredients except for paprika. Divide this mixture in half
    4. Add paprika to one half of the divided mixture and rub this half into the chicken pieces. Set aside
    5. Take the other half of the seasoning mixture and combine with the almond meal in a large bowl
    6. In another bowl, whisk together egg and almond milk
    7. Take 1 piece of chicken at a time and dip in the egg mixture before coating in the flour mixture. Set aside on a plate and when all chicken is coated, allow to stand for 10 minutes
    8. Coat each chicken piece again in the flour mixture (do not dip in egg first this time) and transfer to the baking tray
    9. Drizzle melted coconut butter or olive oil over the chicken
    10. Bake for 40 minutes or until the chicken is cooked through and the coating is nicely browned
