• Orange Poppy Seed Cake

    • 6 eggs
    • 1/4 cup coconut butter, melted
    • 1/4 cup coconut milk
    • 2 tablespoons honey
    • 1 teaspoon vanilla extract
    • zest from 1 orange
    • juice from 1 orange
    • 1/2 cup coconut flour
    • 2 heaped tablespoons poppy seeds
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon sea salt


    1. Preheat oven to 180 degrees Celsius
    2. Grease a baking tray approx 8×8 inch with coconut butter or grease proof paper
    3. In a mixing bowl combine eggs, coconut milk, honey, vanilla extract, orange zest and coconut oil
    4. In a separate bowl combine the coconut flour, baking powder, poppy seeds and sea salt. Slowly combine it with the wet mixture
    5. Pour the batter into the greased pan and bake for 35 – 40 minutes, until browned on top and a skewer comes out clean
    6. Remove from oven and allow to cool slightly. While still warm, poke the top of the cake all over with a fork and evenly pour the orange juice over the top
    7. Sprinkle some orange zest on top if desired
