    Ingredients – chocolate layer

    • 1/4 cup cocoa powder
    • 1/4 cup coconut butter
    • 2 tablespoons honey
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon peppermint extract
    • pinch of salt

    Ingredients – mint cream layer

    • 1 ripe avocado
    • 1/4 cup coconut butter
    • dash of lemon juice (to keep avocado from browning)
    • pinch of salt
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon peppermint extract
    • 2 tablespoons honey

    Method

    1. Combine all of the ingredients for the chocolate layer in a saucepan over a medium heat. Continue to heat until melted and well combined
    2. Transfer to a bowl and place in freezer to cool while you prepare the mint cream
    3. Place all of the ingredients in a food processor or blender and mix until smooth and creamy. Taste and adjust sweetness with additional honey or make a mintier taste with more peppermint extract
    4. Line a square tray with greaseproof baking paper and pour in the chocolate base. Spread it evenly and pour the mint cream on top
    5. Chill in the freezer for at least an hour before cutting into squares. Keep refrigerated to keep from browning
