• Mexican Caulifower Rice

    This is a great option to have as a side dish or main meal. You can add bacon, prawns, chicken, beef strips etc if you choose. Additionally you can add chili powder or jalapeno peppers if you prefer an extra hot or spicy Mexican flavour


    • 1 large cauliflower, cut into florets
    • 3 tablespoons coconut butter or small amount of olive oil
    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon cumin
    • 1/2 teaspoon paprika
    • 1/4 cup tomato paste
    • 1/2 teaspoon cilantro
    • 1 large tomato, chopped


    1. Grate the cauliflower florets or pulse in a food processor or blender until it resembles rice. Set aside
    2. Heat the coconut butter or olive oil in a fry pan over a medium – high heat. Add the onion and saute for 2 minutes. Add garlic and saute for an additional minute
    3. Add the cauliflower to the pan and stir. Add salt, pepper, paprika and cumin. Stir well to combine. Cook for 2-3 minutes stirring continuously
    4. Add tomato paste, cilantro and chopped tomatoes. Continue to cook and stir until all of the liquid is absorbed and continue to cook for an additional 2-3 minutes. Taste and adjust the seasoning according to preference
    5. Serve immediately
