• Luscious Lemon Bars


    A tasty treat for lemon lovers minus most of the calories

    Ingredients (base)

    • 1/2 cup sunflower seeds, finely ground
    • 2/3 cup coconut flour
    • 1/2 teaspoon baking soda
    • 2 tablespoons coconut oil plus a little extra for greasing tray
    • 2 tablespoons honey
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1 and 1/2 teaspoons fresh lemon juice

    Ingredients (filling)

    • 3 large eggs plus 1 yolk, lightly beaten
    • 1/2 cup honey
    • 3/4 cup fresh lemon juice
    • 3 tablespoons coconut flour
    • 1 teaspoon lemon zest, grated


    1. Preheat oven to 180 degrees Celsius
    2. Combine all of the ingredients for the base in a blender or food processor and mix for 15 – 20 seconds to combine. Pulse once or twice until a dough like mixture forms
    3. Lightly grease a 9 x 9 inch baking tray with coconut oil. Evenly spread the dough into the tray
    4. Prick the dough in several places with a fork and then bake for 10 minutes. Remove from oven and allow to cool while you prepare the filling
    5. Whisk together all of the other ingredients. Allow to stand for 10 minutes to allow the coconut flour to absorb all ingredients then whisk again and continue to do so until the filling is smooth
    6. Evenly pour the filling over the top of the base and place back into the oven for 15 – 20 minutes or until the centre is set but still has a slight jiggle
    7. Cool on the bench for half an hour before cooling completely in the fridge and slicing
