• Hot And Sweet Ginger Garlic Chicken


    If you like a hot and spicy dish then adjust chillies accordingly. If you prefer a milder dish or simply prefer a sweet garlic dish, omit completely


    • 1 tablespoon coconut oil
    • sea alt and black pepper to taste
    • 6 bone in chicken thighs, skin on
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced or grated
    • 1/2 teaspoon ginger powder
    • 1 teaspoon sesame seeds
    • 1-2 pinches chilli flakes
    • 1/4 cup soy sauce


    1. Preheat oven to 220 degrees Celsius
    2. In a baking dish, melt the coconut butter, then season both sides of chicken with salt and pepper
    3. Place the chicken skin side down into the dish and cook for 5-6 minutes or until the skin browns and lifts away from dish easily
    4. While the chicken is cooking, combine the onion, garlic, ginger, sesame seeds, chilli flakes, soy sauce and additional salt and pepper in a small mixing bowl
    5. Turn the chicken over so the skin side is facing upwards and pour the sauce mixture evenly over the top
    6. Cook for a further 30 minutes or until done
