• Honey Mustard Leg Of Lamb With Roast Vegetables



    • 1 medium sized leg of lamb
    • 1 tablespoon coconut butter
    • 1 tablespoon Dijon mustard
    • 2 tablespoons honey
    • 2 cloves garlic, minced
    • 1 tablespoon fresh rosemary
    • 1 large sweet potato, chopped
    • 6 carrots, halved


    1. Pre heat oven to 200 degrees Celsius
    2. Line a baking pan with grease proof paper and add lamb
    3. In a bowl combine coconut butter, mustard, honey, garlic and rosemary
    4. Rub mixture into lamb ensuring it is rubbed firmly and well coated
    5. Add carrots and sweet potato. Season with salt and pepper
    6. Roast for 20 minutes before reducing heat to 175 degrees Celsius
    7. Cook for an additional hour or until meat is cooked to your liking and vegetables are softened
