• Healthy Nacho’s


    Ingredients – for toppings

    • 2 medium tomatoes, diced
    • 2 tablespoons fresh cilantro, diced
    • 1-2 tablespoons lime juice
    • 2 cups guacamole
    • 2-3 spring onions, chopped

    Ingredients – for sweet potato chips

    • 3 large sweet potatoes, peeled and thinly sliced
    • 3 tablespoons coconut butter
    • 1 teaspoon salt

    Ingredients – for the meat

    • 1 medium onion, finely diced
    • 1 tablespoon coconut butter
    • 1 teaspoon mild chili flakes
    • 5oo grams lean beef mince
    • 2 cloves garlic, minced
    • 1 teaspoon paprika
    • 1/2 teaspoon cumin
    • 1 tablespoon tomato paste
    • 1 tin diced tomatoes
    • 1 tablespoon tomato paste
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper


    1. Make sweet potato chips by pre heating oven to 180 degrees Celsius
    2. Melt coconut butter and transfer to a large bowl with sliced sweet potato and salt. Toss until evenly coated
    3. Place sweet potato onto a baking tray in a single layer and cover with grease proof paper. Bake for 10 minutes before turning and baking for another 10. Continue process until all chips are cooked
    4. Prepare the minced beef while the chips are baking by heating coconut butter in a large fry pan over a medium heat. Add onion and chili flakes and saute for a few minutes until softened
    5. Add mince add cook for 4-5 minutes while stirring continuously. Add garlic, diced tomatoes and tomato paste along with all remaining spices and stir well to combine
    6. Bring the mixture to a simmer before reducing the heat to medium – low. Cover and allow to cook for another 20 minutes while stirring occasionally
    7. When done, quickly stir in the chopped tomatoes, lime juice and cilantro. Add salt and pepper to taste and remove from heat
    8. Place sweet potato chips onto a large platter and cover with the beef mixture and top with guacamole and spring onions
