• Greek Baked Chicken

    • 1.5 kg skinless boneless chicken thighs
    • zest of 1 lemon
    • 4 cloves garlic, crushed
    • 1 tablespoon dried oregano
    • pinch of sea salt
    • 2 tablespoons coconut butter or olive oil, melted


    1. Preheat oven to 180 degrees Celsius. Grease the bottom of a baking tray
    2. Place chicken in tray in a single layer and pat the top dry with paper towel
    3. In a bowl combine lemon zest, garlic, oregano, salt and coconut butter. Mix well and pour evenly over chicken. Rub into the surface with your hands
    4. Bake for 30 minutes or until no longer pink in the middle
    5. Serve with steamed vegetables, garden salad or rice
