• Gluten Free Chicken Enchiladas

    All the taste minus the rubbish

    Ingredients

    • 4 gluten free wraps – recipe here – gluten-free-low-fat-wraps
    • 350 grams diced chicken
    • 1/2 an onion, diced
    • 2 cloves garlic, minced
    • 1 tablespoon coconut oil
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon sea salt
    • 1 cup shredded cheese of your choice
    • 1 jar salsa dip

    Method

    1. Preheat the oven to 180 degrees Celsius
    2. In a frypan, combine the chicken, onion, garlic, salt, pepper and coconut oil. Cook until the chicken is done and set aside
    3. In a baking dish roughly 8 x 8 inch, pour half of the jar of salsa dip into the bottom
    4. Fill each of the 4 wraps evenly with the chicken mixture along with a little bit of cheese in each
    5. Roll the wraps up and place seam down into the baking dish
    6. Cover the wraps with the remaining salsa dip and sprinkle remaining cheese over the top
    7. Bake in the oven for around 25 minutes
