    Fukien Sweet And Sour Fish


    • 500 grams firm flesh white fish, cubed
    • 1/2 tablespoon garlic, minced
    • 1/2 tablespoon ginger, minced
    • small amount of salt
    • enough olive oil or coconut oil to cover the bottom of a fry pan

    Ingredients – for batter

    • 3 tablespoons cold water
    • 1 egg
    • 8 tablespoons tapioca flour

    Ingredients – for sauce

    • 1/4 cup honey
    • 3 tablespoons vinegar
    • 5 tablespoons water
    • 1 tablespoon soy sauce
    • 1 tablespoon sherry
    • 1 teaspoon tapioca flour
    • 1 teaspoon sesame oil
    • 1/2 teaspoon salt


    1. Sprinkle a small amount of salt over the cubed fish pieces and set aside
    2. Combine all ingredients for sauce. Mix well and set aside
    3. Whisk together all ingredients for the batter until it forms a thin paste similar to pancake batter
    4. Mix fish pieces in the batter until they are well coated
    5. Heat oil of choice in a large fry pan over a medium – high heat and fry the fish pieces for 1 minute each side turning only once
    6. At this stage, remove the fish and drain excess fat in between paper towels. Return to the pan and fry for an additional 30 seconds per side
    7. Remove fish and once again drain between paper towel. Remove all oil from the pan except for around 2 tablespoons
    8. Add ginger and garlic, fry briefly until softened and aromatic
    9. Add sauce and heat until it becomes thick and bubbly
    10. Return fish to the pan and stir until all pieces are coated evenly
    11. Serve as is or with rice
