• Crusted Rack Of Lamb

    • 1 rack of lamb (8 – 10 cutlets)
    • 1 tablespoon butter
    • 1 tablespoon olive oil
    • 1 spring onion, finely chopped
    • 2 tablespoons Dijon mustard
    • 1 cup almonds, crushed to consistency of breadcrumbs
    • 1 tablespoon parsley, finely chopped
    • 1 tablespoon rosemary, finely chopped
    • 1 teaspoon lemon zest, grated
    • sea salt and black pepper


    1. Pre heat oven to 200 degrees Celsius
    2. Place roast in a baking tray. Score the lamb with a knife and season with salt and pepper. Bake for 10 minutes
    3. While the lamb is cooking, melt butter and oil in a small saucepan. Add spring onion and gently fry it for a couple of minutes until translucent. Add almonds, lemon zest and herbs. Mix well
    4. Remove lamb from oven and smear with mustard. Pack on the almond mixture firmly
    5. Return lamb to oven and cook for a further 30 – 40 minutes depending on how you like your meat cooked
    6. Serve with your favourite roast vegetables
