• Crunchy Honey Garlic Pork Chops

    You can replace this with chicken if you’re not a pork lover or as a simple alternative


    • 6-8 pork chops (or chicken breasts halved sideways)
    • 2 eggs
    • 4 tablespoons water
    • 2 cups almond meal
    • 1 teaspoon salt
    • 1 teaspoon black pepper
    • 1 teaspoon garlic powder
    • Extra virgin olive oil for cooking

    Ingredients for glaze

    • 1 and 1/2 cups honey
    • 1/2 cup soy sauce
    • 3 cloves garlic, minced
    • 2 tablespoon coconut butter
    • pepper to taste


    1. Whisk the eggs and water together in a shallow dish
    2. In another shallow dish, mix together the almond meal, salt, pepper and garlic powder
    3. Dip the chops into the dry mixture and then in the egg mixture before returning to the dry mixture once again. Be sure to cover thoroughly on both sides as this is what gives the chops a crispy coating
    4. In a frypan over a medium/high heat, add enough olive oil to cover the base and cook chops for 5-6 minutes on each side
    5. Try not to turn more than once or your coating will start to come off
    6. Remove cooked chops from the pan and into a baking dish
    7. In a frypan over a medium heat, sauté the garlic in the coconut butter and then add honey, soy sauce and pepper. Bring to a boil then reduce to a low simmer for a few minutes
    8. Pour half of the glaze over the chops. Turn them over and pour the other half over the other side
    9. Place uncovered into a preheated oven at 180 degrees Celsius and cook for 20-25 minutes. This will set the glaze as well as ensure they are cooked through
    10. Serve with your favourite side dish
