• Creamy Leek And Salmon Soup

    Salmon soup

    A dairy free creamy soup recipe. Perfect healthy option of a comfort food.


    • 2 tablespoons coconut butter
    • 4 leeks, washed and sliced into crescents
    • 3 cloves garlic, minced
    • 6 cups chicken stock
    • 1 tablespoon dried thyme
    • 500 grams salmon, cut into bite sized pieces
    • 1 & 3/4 cup full cream coconut milk
    • Salt and pepper to taste


    1. Heat the coconut oil in a large saucepan over a low – medium heat
    2. Add the chopped leeks and garlic. Cook until slightly softened
    3. Pour in the chicken stock and thyme. Simmer for about 15 minutes and add salt and pepper if desired
    4. Add the salmon and coconut milk and gently increase the heat to a gentle simmer
    5. Continue to cook until salmon is opaque and flaky or to your liking
    6. Serve immediately
