• Coconut Lamb Curry

    • 500 grams diced lamb
    • 2 tablespoons coconut butter
    • 1 brown onion, thinly sliced
    • 1 stick celery, diced
    • 1 carrot, diced
    • 2 cloves garlic, minced
    • 2 teaspoons garam masala or curry powder
    • 2/3 teaspoon turmeric powder
    • 1 cup coconut milk
    • 1 tablespoon tomato paste
    • 1/2 cup water
    • 1 teaspoon sea salt
    • squeeze of lemon juice
    • coriander or parsley to garnish


    1. Heat a tablespoon of coconut butter over a medium – high heat in a pot or large saucepan
    2. Add lamb and stir while cooking until browned. Add onion and celery. Cook for 1 minute or until slightly softened. Reduce heat to medium
    3. Add garlic, garam masala, turmeric and coconut butter. Stir for a minute to mix.
    4. Add coconut milk, tomato paste, water and sea salt. Stir and bring to a boil. Reduce heat to a simmer. Cover and cook for 1 hour, stirring occasionally
    5. After 1 hour, add carrots and cook covered for a further 40-45 minutes
    6. Squeeze in some lemon juice and sprinkle with coriander or parsley just prior to serving
