    Citrus glazed chicken tenders

    Ingredients – for glaze

    • 1/4 cup honey
    • 1/4 cup low sodium soy sauce
    • 1/4 cup orange juice
    • 2 tablespoons lemon juice
    • 1 tablespoon extra virgin olive oil
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder

    Ingredients – for chicken tenders

    • 500 grams boneless, skinless chicken thighs cut into thick strips
    • 3/4 cup almond meal
    • 1/2 cup tapioca flout
    • 1/2 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon paprika
    • 2 large eggs, whisked
    • 2 tablespoons water


    1. Pre heat oven to 180 degrees Celsius
    2. Line a baking tray with grease proof paper and set aside
    3. Prepare the glaze by place all of the ingredients into a small saucepan over a medium – high heat. Bring briefly to a boil, stirring to combine
    4. Reduce heat to a simmer until the sauce thickens (10 to 12 minutes). Remove from heat and set aside
    5. Prepare chicken tenders by combining the almond meal, tapioca flour, sea salt, pepper and paprika in a medium sized mixing bowl. Stir to combine
    6. Place the 2 eggs and water into a small bowl and whisk to combine
    7. Dip a chicken strip into the egg mixture ensuring it is fully submerged before coating very well in the almond meal mixture. Transfer to the baking tray. Repeat this process until all of the chicken is coated
    8. Place tray in the oven and cook for around 15 minutes or until no longer pink in the middle. Cooking time may vary depending on the thickness of your strips
    9. Either serve with the glaze beside the chicken to be used as a dipping sauce or drizzle over the top
