• Choc Mint Pudding

    • 1 avocado, refrigerated
    • 1 ripe banana
    • 1/2 cup almond or coconut milk
    • 1/2 teaspoon stevia
    • 1 teaspoon peppermint extract
    • 2 tablespoon cocoa powder
    • small amount of dark chocolate for topping (shaved)


    1. Place avocado, banana, milk and stevia into a blender or food processor. Mix until well combined. Remove half of the mixture and set aside
    2. Add cocoa powder to blender and mix until well combined
    3. Add peppermint extract to other half of mixture and stir well
    4. In your serving bowls, layer the mint and chocolate layers. Sprinkle with dark chocolate
    5. Refrigerate for at least 30 minutes before serving
