• Chili Lime Chicken Burger

    Grain free, gluten free and packed full of healthy proteins, carbs and fats. A perfect alternative for fast food lovers. Makes 4 burgers

    Ingredients for patties

    • 500 grams chicken mince
    • 1/4 cup red onion, chopped
    • 1/4 cup red capsicum, chopped
    • 1 clove garlic, minced
    • 1 tablespoon cilantro, chopped
    • 1/2 teaspoon salt
    • 1/4 cup lime juice
    • 1/4 teaspoon mild chili flakes
    • small amount of olive oil

    Ingredients for assembly

    • 4 grain free buns – recipe here
    • 1 cup fresh avocado, mashed
    • lettuce of choice
    • 1 tomato, sliced
    • thin slice of cheese (optional)
    • low fat mayonnaise (optional)

    Method

    • Sauté onions, capsicum and garlic in a small amount of olive oil over a medium heat or until softened
    • Place chicken, onion mix, cilantro, salt, lime juice and chili flakes in a bowl
    • Mix with hands until well combined. Divide into 4 even portions and shape into patties
    • Grill for, add patties and as much filling as desired
