• Chicken Strips With Honey Mustard Dipping Sauce

    Ingredients – for chicken strips

    • 500 grams boneless, skinless chicken breast, cut into strips
    • 1 cup almond meal
    • 1 cup shredded coconut
    • 1 egg
    • 3/4 teaspoon paprika
    • 1/2 teaspoon cumin
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon garlic powder
    • salt and pepper

    Ingredients – for honey mustard sauce

    • 5 tablespoons honey
    • 2 tablespoons Dijon mustard
    • 1 tablespoon apple cider vinegar


    1. Pre heat oven to 180 degrees Celsius
    2. In a bowl, combine paprika, cumin, onion powder, garlic powder and salt and pepper
    3. Lay sliced chicken breasts on a piece of greaseproof paper or plate and season each side with the herb mixture
    4. In a small bowl, whisk the egg
    5. In another bowl, combine the almond meal and coconut. Dip each chicken piece into the egg and then coat with the almond meal / coconut mixture. Ensure each piece is well coated
    6. Lay each piece onto a baking tray lined with greaseproof paper and bake for 15-20 minutes
    7. While the chicken is cooking, make the dipping sauce by combining honey, mustard and apple cider vinegar and whisking together
