• Chicken With Rosemary And Mushroom Glaze

    Chicken rosemary

    A healthy low fat meal for the whole family. Serves 4


    • 4 boneless skinless chicken breasts
    • Sea salt and pepper to taste (optional)
    • 2 cloves garlic, minced
    • 4 tablespoons coconut butter
    • 2 teaspoons dried rosemary
    • 10 white button mushrooms, sliced


    1. Season chicken breasts with sea salt and pepper (optional)
    2. Heat a large frypan over a medium heat with 1 tablespoon of coconut butter
    3. Add chicken breasts and cook until no longer pink in the middle, turning occasionally
    4. While chicken is cooking, add remaining 3 tablespoons of coconut butter to a medium sized saucepan over a medium / high heat. When pan is hot add rosemary and garlic. Simmer for 5 minutes
    5. Add mushrooms and cook for a further 5 minutes or until mushrooms are brown
    6. Pour mushroom mixture over the chicken and serve with a side salad or vegetables
