• Chicken Parmigana Meatballs

    This recipe makes about 20 meatballs. Adjust accordingly for more or less

    Ingredients

    • 500 grams chicken mince
    • 100 grams almond meal
    • 25 grams parmesan cheese, grated
    • 1/2 cup almond milk
    • 1 teaspoon sea salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon garlic powder
    • 125 grams salsa
    • 75 grams mozzarella cheese, sliced
    • small amount of olive oil or coconut butter

    Method

    1. Pre heat oven to 180 degrees Celsius
    2. In a large bowl combine half of the almond meal, parmesan cheese, almond milk, salt, pepper, oregano and garlic powder
    3. Add chicken mince and combine with your hands
    4. Place the other half of almond meal on a plate. Using your hands (dampened may be easier), roll balls out of the mixture about 1 inch in diameter circles and coat in the almond meal
    5. Lightly grease a fry pan with olive oil or coconut butter over a medium heat. Cook meatballs for about 15 minutes until they are golden brown, turning a couple of times
    6. Transfer meatballs to an oven safe dish or baking tray. Spoon 1 tablespoon of salsa over each one and a slice of mozzarella cheese
    7. Bake for 15 minutes or until cheese is melted. Sprinkle with dried oregano before serving
