    • 1 and 1/2 cups sliced almonds
    • 2 cups shredded coconut
    • 1/3 cup sunflower seeds
    • 1/3 cup pumpkin seeds
    • 1 tablespoon sesame seeds
    • 1/2 cup almond meal
    • 1/3 cup coconut butter, melted
    • 1/4 cup almond butter
    • 1/4 cup honey
    • 1 teaspoon vanilla extract
    • 3/4 teaspoon baking soda
    • 1 tablespoon flaxseed meal
    • 1 and 1/2 tablespoons water
    • 3/4 cup mixed dried fruit


    1. Pre heat oven to 160 degrees Celsius. Grease a baking tray with a small amount of melted coconut butter
    2. Mix flaxseed with water and allow to sit for 3-4 minutes
    3. Put pumpkin seeds into a food processor or blender and pulse a few times to make smaller in size. Remove and set aside
    4. Add coconut butter, almond butter, honey and vanilla extract to the flaxseed and water mix. Stir and combine well
    5. Add almond meal and baking soda. Mix well
    6. Add almonds, shredded coconut, pumpkin seeds, sunflowers seeds, sesame seeds and dried fruit. Combine well
    7. Spoon the mixture into your prepared baking tray and spread out evenly
    8. Bake for 20-25 minutes until golden brown. Remove from oven and allow to stand in tray to cool
    9. Once cooled slice into 15-20 bars and store in refrigerator
