• Cauliflower Mac And Cheese



    • 1 medium cauliflower, cut into chunks
    • 50 grams cream cheese
    • 1/4 cup full fat coconut milk
    • 2 cups shredded cheese of choice
    • 1 teaspoon mustard powder
    • 1 teaspoon turmeric powder


    1. Pre heat oven to 180 degrees Celsius
    2. Steam chopped cauliflower for 10 minutes to soften
    3. Mash cauliflower in a baking dish. Leave it slightly chunky
    4. Heat a saucepan over a medium heat and add coconut milk. Bring to a simmer and lower heat slightly
    5. Add cream cheese in small amounts and mix until completely dissolved
    6. Add shredded cheese half a cup at a time, stir until melted and continue process until all cheese has been added and melted
    7. Add mustard and turmeric powder. Mix well
    8. Pour over cauliflower and bake for 25 minutes or until bubbly
