• Cauliflower Fried Rice


    Cauliflower fried rice is a perfect substitute for the fatty, unhealthy traditional variety. It’s awesome to eat on it’s own or as a side dish to accompany your favourite protein source


    • 4 slices of bacon, fat and rind removed
    • 1 medium cauliflower, chopped into chunks
    • 1 onion, diced
    • 1 large carrot, grated
    • 2 eggs
    • 2 tablespoons coconut oil
    • 1-2 tablespoons soy sauce
    • 1 teaspoon fish sauce
    • 1 teaspoon sesame oil
    • Salt and pepper
    • 1 spring onion, sliced


    1. Dice bacon pieces and fry until crispy. Drain any excess fat, remove from pan and set aside
    2. Whisk eggs and cook in the same frypan similar to a thin omelette. When cooked, slice into strips and set aside
    3. In a food processor or blender, add the cauliflower and pulse until it resembles rice
    4. Heat the coconut oil in the frypan and cook onion until translucent
    5. Add carrot and cauliflower. Season with salt and pepper if desired and cook for 5 minutes or until the cauliflower is cooked
    6. Stir in soy sauce, sesame oil and fish sauce.
    7. Serve in a large bowl or dish and top with bacon pieces and sliced spring onion
