• Carrot cake pancakes

    This recipe will make about 10 small or 6 medium pancakes. Adjust amounts accordingly for more or less

    Ingredients

    • 1/2 cup almond meal
    • 2 tablespoons coconut flour
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 1/2 cup full fat coconut milk
    • 1/4 cup walnuts, chopped
    • 1 cup grated carrot
    • 2 tablespoons coconut butter
    • 3 eggs
    • coconut butter for cooking
    • honey walnuts for topping (optional)

    Method

    1. In a medium bowl combine almond meal, coconut flour, baking soda, salt, cinnamon and nutmeg
    2. In a separate bowl combine coconut milk, walnuts, coconut butter, carrots and eggs
    3. Add wet ingredients to the dry and combine well
    4. Grease a fry pan with a small amount of coconut butter over a medium heat
    5. Pour batter into pan and cook each side until brown on each side turning only once
    6. Top with crushed walnuts and honey if desired. Can also top with fresh berries or Greek yoghurt
