• Caramelized Black Pepper Chicken

    Black Pepper Caramelized Chicken


    • 500 grams skinless boneless chicken thighs, cut into 1 inch chunks
    • 1/2 cup honey
    • 4 tablespoons fish sauce
    • 4 tablespoons water
    • 3 tablespoons rice vinegar
    • 1 clove garlic, minced
    • 1 teaspoon grated ginger
    • 1/2 teaspoon fine black pepper
    • 2 teaspoons chili flakes
    • 1 tablespoon olive oil
    • 1 spring onion, thinly sliced
    • fresh cilantro for garnish, chopped


    1. In a bowl, combine honey, fish sauce, water, rice vinegar, garlic, ginger, pepper and chili. Mix until the honey is dissolved and combined
    2. Heat the olive oil in a fry pan over a medium heat. Add the spring onion and saute until softened
    3. Add the chicken and fish sauce mixture and simmer over a high heat until the chicken is fully cooked and the sauce thickens and caramelizes
    4. Transfer to a plate and top with chopped cilantro
