    Ingredients

    • 1 kg lean mince of your choice
    • 1 large sweet potato, diced
    • 2-3 cups spinach, chopped
    • 1 spring onion, diced
    • 10-12 eggs
    • salt and pepper to taste

    Method

    1. Pre heat oven to 180 degrees Celsius
    2. Grease a square baking tray with coconut butter or alternative and set aside
    3. Heat a fry pan over a medium – high heat and add mince. Cook until brown, remove and set aside. Add sweet potato to the same fry pan and cook for 10 – 15 minutes until tender
    4. Transfer sweet potato to a bowl and toss with spinach, spring, mince, salt and pepper. Transfer the mixture into your prepared baking tray and spread evenly
    5. Whisk the eggs in a bowl and evenly over the mixture
    6. Bake for 20 – 25 minutes or until set. Allow to cool slightly before serving
